CAROB GERM AND SEED PROTEIN is isolated from seeds exclusively by physical processes. Carob seed protein is very rich in proteins, fibers, and amino acids, especially glutamic acid, arginine, aspartic acid, leucine, isoleucine, and lysine. The emulsifying effect is achieved through intensive shearing forces (friction, fast rotation, etc.)
APPLICATION: Carob seed protein is used in gluten-free products, especially in bakery products. It is also used in protein bars and drinks, as well as for emulsification in meat products and sauces.
It is an excellent alternative to soy protein.
Its antioxidant characteristics make it an interesting ingredient for functional food and a cheaper alternative to other proteins.

They are a cheaper alternative to other proteins such as milk protein or soy protein, which are commonly used in gluten-free products. Their addition to wheat flour is interesting because caroubin has functional characteristics similar to wheat gluten, enhancing dough strength and stability during mixing.
